I always ask the servers if something is gluten free and they’re happy to go and ask the chefs.
How many times have you been glutenized in your dining hall? If you didn't answer NONE, please explain what happened and how school responded.
1, The server didn’t wipe of their cutting board or knife before cutting my gf sandwich, but I didn’t see any crumbs so I thought I’d be fine. Turns out I’m more sensitive than I thought because those next couple of days were pretty miserable. I didn’t let the server or anyone official know because I figured I’d just ask them to wipe it off next time.
Describe your biggest celiac challenge at college and how you manage it
There aren’t tons of options (NNU is very small and only have one cafeteria) and usually the only food option is over cooked meat. It’s alright over all. I’m just starting to hate chicken.
If you were in charge of dining, what changes would you implement to better feed celiac students? Would your school be open to these suggestions?
I would use designated fryers and grills so that those with celiac could have burgers and fries without buns as well. I feel like those small things would go a long way. Don’t make something with gluten when it’s totally fine without it. I do know think NNU would be open to these suggestions.
Did celiac impact your housing decision? How? Is there a certain dorm you recommend for celiacs? Why?
I live in an apartment not affiliated with NNU so I’m not sure.
Your advice to new celiac kids for managing the dining halls? Favorite dining hall(s)?
Ask for “special requests”! Such as wiping down the cutting board! Your health is worth it!
Your advice to new celiac kids for eating in the dorm? Favorite snacks? Places that deliver?
Chik Fil A delivers. Get those fries.
Your advice to new celiac kids on preparing before they come? Or doing upon first arrival?
Bring snacks, protein bars, favourite chips, etc. You won’t starve, but you won’t be eating particularly well while you’re here.
Your advice to new celiac kids on managing keg parties and alcohol scene?
No idea.

Ive never had a problem from Campos Market tacos.
